Healthy noodle broth bowl with chicken (can replace chicken with fish, shrimp, beef, tofu).
Makes 4 servings
INGREDIENTS:
4 cups chicken broth 1-2 tablespoon low sodium soy sauce 2 teaspoons sesame oil
1 teaspoon ground ginger 1/2 Tablespoon Asian chili garlic sauce
8 ounces soba noodles
2 cups fresh spinach
1 cup sliced mushrooms
1 pound boneless, skinless chicken breasts
Fresh cilantro (garnish, optional)
DIRECTIONS:
To Cook Noodles:
In a large pot, combine chicken broth, soy sauce, sesame oil, ginger, and Asian chili sauce. Bring mixture to a boil, add soba noodles, and cook for 5 minutes until noodles are tender.
Reduce heat to medium and add spinach and mushrooms to noodles. Cook until spinach is wilted.
Ladle mixture into four large bowls.
To Cook Chicken:
Turn oven onto broil.
Place chicken breasts on a broiler pan, brush with olive oil.
Broil 3 to 4 inches from heat, turning over every 5 minutes, 15 minutes total.
Slice chicken into 1/4 inch strips.
Place even amounts of chicken atop each bowl.
Garnish with cilantro.
