Hearty chili with fire roasted tomatoes and corn. Top with avocado for healthy fat.
Makes 14 servings (1 cup each)
INGREDIENTS:
1 pound 93% ground beef
1 large onion, chopped
2 cans (14.5 oz) fire roasted chopped tomatoes, undrained
1 can (14.5 oz) tomato sauce
1 cup kernel corn
1 can (4 oz) diced green chilies, undrained
2 cans (15.5 oz) red beans, rinsed
1 packet chili seasoning
DIRECTIONS:
Brown and crumble ground beef in a large fry pan. Drain in colander and then rinse under hot tap water until fat is rinsed away.
Transfer ground beef to slow cooker, add onions, tomatoes, tomato sauce, chilies, and chili seasoning. Cook on low for 6 hours.
Stir corn and beans into slow cooker mixture, continue cooking on low for 2 more hours.
Serve in individual bowls.
Garnish with avocado chunks, shredded 2% cheddar cheese, and chopped onion (optional).
