Makes about 5 servings
INGREDIENTS:
1/2 tsp minced fresh garlic
1 cup chopped onion
1 T olive oil
1/8 tsp ground cumin
1/2 tsp chili powder
1 T lemon juice
16 oz. cooked chicken breast (can use rotisserie or canned chicken)
1 cup frozen corn
2 cups cooked rice
3-1/2 cups chicken broth
1 cup chunky salsa
5 hard taco shells, crushed
Fresh cilantro, chopped (optional)
DIRECTIONS:
In a large pot, saute' onion and garlic in olive oil, stir in remaining ingredients and bring to a boil.
Reduce heat to low and simmer for 15 minutes.
Ladle soup into bowls and top with crushed taco shells and fresh cilantro.
