Chicken Cranberry Salad Sandwich

Here is one way to use crockpot shredded chicken. Add apples, walnuts, and a drizzle of honey for extra pizazz.



Makes 5 servings

INGREDIENTS:


1 lb cooked chicken breast, chopped

1 cup lowfat mayonnaise

1/2 cup dried cranberries

1/2 cup chopped celery

1/2 cup chopped red onion

1 tsp celery salt

1/2 tsp onion powder

Ground pepper to taste


DIRECTIONS:


  1. Mix all ingredients together.

  2. Serve on your favorite toasted bread.
